Ayurvedic, Vata-Pitta Balancing Lentil and Rice Bowl Recipe



Ingredients


Base

  • 1 cup basmati rice, pre-soaked (at least 30 minutes)

  • ½ cup green French lentils, pre-soaked

  • 1 tsp ghee

  • 1 tsp coriander seeds or powder

  • 1 tsp fennel seeds

  • 1 tsp mustard seeds

  • 2 medium carrots, chopped

  • Cabbage, chopped (about 1–1½ cups loosely packed)

  • 1 whole apple, diced

  • 1 bay leaf

  • A pinch of turmeric

  • Sea salt to taste

  • Water as needed for boiling


Lentil Pre-Boil (Gas-Reducing Step)

  • ½ tsp sea salt

  • 1 tsp cumin seeds


Garnish 1 – Toasted Nuts

  • Pecans, toasted (2–3 tbsp)


Garnish 2 – Sweet Spiced Raisins

  • 1 tsp sesame oil

  • Few strands saffron

  • ¼ tsp cardamom

  • 1 tsp cinnamon

  • ½–¾ cup raisins

  • 2–3 tbsp water



Understanding Vata and Pitta Imbalances


Vata dosha is characterized by qualities such as dryness, lightness, and coldness. When out of balance, it can cause anxiety, dryness, and irregular digestion. Pitta dosha, on the other hand, is hot, sharp, and intense. Excess Pitta often leads to inflammation, acidity, and irritability.


A meal that soothes both doshas needs to be warm and moist enough to ground Vata, while also cooling and calming to reduce Pitta’s heat.

This lentil and rice bowl combines ingredients that are easy to digest, mildly spiced, and hydrating. It avoids overly spicy or oily components that could aggravate Pitta, and it includes grounding elements to stabilize Vata. Enjoy!!!!
