🌿 Yummy Okra & Peanut Vegan Rice Bowl

(Instant Pot Recipe)



Ingredients

• 2 cups fresh okra (bhindi), washed & fully dried

• 2 tbsp oil

• 1 tsp cumin seeds

• ½ cup peanuts (groundnuts), soaked overnight

• 1 cup basmati rice, soaked overnight

• ½ cup dal (any split dal), soaked overnight

• 1 bell pepper, chopped

• Himalayan salt, to taste

• Indian mixed seasoning (to taste)

• Lemon pepper, to taste

• A little water (just enough for cooking)

Instructions

  1. Wash the okra and dry it completely (this is key for crispiness & avoiding bitterness).

  2. Cut off the head and tail, then slice into ~1 cm pieces.

  3. Heat oil in a pan and add cumin seeds. Once fragrant, add the okra.

  4. Add soaked peanuts and sauté everything together until the okra is nicely browned.

  5. In the Instant Pot, add soaked rice and soaked dal.

  6. Add the sautéed okra-peanut mixture to the pot.

  7. Add chopped bell pepper, salt, Indian seasoning, and lemon pepper.

  8. Add a small amount of water (as shown in the video).

  9. Pressure cook for 6 minutes.

  10. Let it naturally release, fluff gently, and enjoy ✨
